Although he's rather AoW card hungry, he is an excellent asset when fighting monsters thanks to his slayer talent: he may re-roll 2 dice. At the expense of 1 AoW card he gets +2/+2 (and has 8/9). 4 activations and 2 AoW cards are decent for a 4RP unit.
He may only have 6 vitality - but his second (free) talent more than makes up for it; basically he is very hard to damage by 0 range melee units. He can even try to duck ranged attacks as the skill isn't limited to range 0. With the Guard talent he also makes a fine bodyguard as he can redirect an attack to himself - and then jump out of the way. A bit similar to the Teumessian Fox.

Theseus the most flexible and cinematic hero in the game. If they attack at one range he can either dodge out of range or dash right in and charge them with his first ability, which gives him initiative and big stats to put in the hurt on fragile range units. Plus the extra mobility allows him to close the range rapidly.
You can also guard and use your ability to make him a 8/9 beater with initiative. Most units won't want to mess with him.

I wouldn't call him AoW hungry at all! You can search for his activation card at any time, plus give him a stat bonus and Initiative, for the same price as it would normally cost just to fetch an activation card. That's pretty cost-efficient and can be used both offensively and defensively. Want to attack, say, the Colchidian Dragon? You can negate that attack-ending retaliation of his. And when used defensively, whenever you want to retaliate, odds are you'll be using an AoW to get that unit's card (or you were lucky enough to have it in the first place, in which case getting another one to replace it can be quite nice).
That Guard + dodge combo sounds pretty cool to be honest. Just another one of those fun Guard shenanigans you can pull in this game. How about this: Theseus+Geryon in the same zone, adjacent to all of your weaker units. Weak unit gets attacked -> Geryon guards -> Theseus guards Geryon -> moves into attacker +2/+2 retaliation with Initiative. Ok, that's a pretty far-fetched and situational scenario, but I'd absolutely love to see that happen.
Monster Slayer is pretty fun too.
